My usual weekday brekkie is homemade granola with some Greek yoghurt. I love it because at 5:30am I want something thatās quick, light and easy.
I’m not a big fan of dried fruit so I don’t include any but you could add some if you like.
Ingredients
- 3 cups rolled oats (not instant or quick oats)
- 1-2 cups chopped nuts (my current mix is pecans and almonds but choose your favourites)
- 2-3 tbsp light brown sugar
- Ā½ tsp cinnamon
- ā cup maple syrup (or honey)
- 1 tsp vanilla essence
- Ā¼ cup coconut oil
How to Make
- Heat oven to 150ā
- Mix all the dry ingredients together in a large bowl
- Add all the wet ingredients
- Use your hands to mix it all together well
- Spread an even layer on a baking tray
- Bake for 15 minutes then stir and bake for a further 5-15 minutes
- Leave to cool in the tray
- Store in an airtight container
